Poatato Cakes - Comfort Food and Comforting Prices
With the summer starting to be an image in the rear view mirror we can turn our thoughts to comfort food as the seasons move again. And what could be more comforting than the nation’s favourite potato cakes? Some call them tattie scones, but if you aren’t so aware of them I thought I’d bring a little floury joy into your life with a recipe for the little belters. The cake or scone is an unleavened bread made from mashed potato, food of the gods, and flour. They are superficially like hash browns, but these are authentically Scottish, not some dodgy processed import.
Ingredients: 500g (1 lb) floury potatoes (such as Maris Piper
25g (2 oz) butter and maybe a little more if you are feeling naughty
Salt and black pepper, to taste. I’m a peppery sort of person myself.
125g (4 oz) plain or self raising flour, self raising will add a little zing
Peel and boil up the spuds for 20 minutes and then drain adding in the butter and seasoning and mashing it well without eating too much pretending to taste it. Wait until the mash has cooled and add the flour a little at a time. Dust a chopping board with flour first so you can the roll the mash dough on it. It will be pretty thick and heavy so give it some welly. Divide the mix into balls in your hand and then roll it out about 1/4inch thick that’s 5mm and then get your cutter to make small rounds or cut up little triangles that some call farls . Prick them with a fork to allow heat to spread.
Warm up a heavy frying pan with a little oil , you can use butter but it can’t get as hot as oil. Once the oil is hot pop the rounds or farls into the pan and cook for 3 or 4 minutes a side until they are gold brown. Don’t let them get too brown, just brown in spots is fine. And now you have the perfect accompaniment to the full Scottish Breakfast ,or a delicious snack . Happy Eating!
