Are you fond of a bit of seafood? I must admit that I am a late adopter of the fruits of the sea, but now I love them, but in moderation of course as they tend to be a bit dear. Last year we went to France and as part of the trip there was a stop-over in Dieppe and the highlight was a restaurant on a desolate dock road called the Comptoir A Huitres or the Oyster Counter. I have to tell you it was brilliant! The oysters I had were cooked in a beautiful sauce, but the missus had her oysters naked as it where on the plate, see the picture above.

Now such delights may be possible from the Firth of Forth where oysters disappeared from the area a century ago after a whole heap of European flat oysters were released to repopulate the waters of the firth, along with crabs, sea snails and other denizens of the deep.  Last year scientists released some 30,000 oysters into the chilly waters of the firth to try and bring back this portion of the sea after centuries of overfishing.   The replacement oysters were Scottish too, and from near Ullapool. The marine biologists report a survival rate nearing 9 in 10 creatures. And the oysters which are natural  water filters also bring with them a whole host of other creatures as the sea bed improves. It’s a win win situation.
