Lovely Oats

Easy Oat Bread

Now I’ve extolled the breakfast of champions that is porridge, now I’d like to introduce you to the wonder of Oat Bread. It’s very good for you, unlike ordinary white bread which is very bad, and even better for you than wholemeal bread and sourdough bread. This is a simple bake, almost foolproof, that anyone can do. And as you can freeze it happily you can use the oven for a couple of loaves at the same time to save money in the cost of living crisis we seem mired in.   Oat bread is what we call low GI. The NHS says that glycaemic index (GI) is a rating system for foods containing carbohydrates. It shows how quickly each food affects your blood sugar or glucose level when that food is eaten on its own.  Bread and rice and other stodge is much higher GI and therefore worse for you, especially if you are carrying that bit of extra timber round the waist, just like me.

You’ll need an oven, but if you have an air fryer you can probably use that, but you’ll have to experiment with cooking times. Oven is easy peasy.

I recommend you get a silicon baking pan, the one in the shape of a loaf. Make sure you grease the pan ever so lightly before you cook.  But you can use a metal bread tin too.

You need:

Porridge Oats to fill a 500g yoghurt pot twice

Unflavoured Yoghurt  500g  the cheapest will do, see picture

Baking Soda also known as bicarbonate of soda 1 ½ teaspoons

 A Mixing Bowl

A Loaf Pan or Loaf Tin  & make sure you grease the pan or tin before you put in the mixture.

Preheat your fan oven to 180 ° C or gas MK 6

Take an empty  500g yoghurt pot  and fill to the top with oats twice and put into the mixing bowl. Then add 1 ½ teaspoonfuls of baking soda and mix together well while dry. Then add the all of the 500g of ordinary unflavoured yoghurt. I use the Greek style one because it’s not so expensive. See pic.

Mix well with your fingers or a fork until all the mix is a little wet.  Put it in the loaf pan and smooth it down, creating nice little ridges on the top for the look of it.

Pop it into the oven for 60 minutes or 65 minutes at  180 ° C or gas MK 6 depending on your cooker and how crisp you like the crust.

Once cooked pop the loaf out of the pan or tin onto a metal griddle, your toaster rack from the cooker will do the job and allow to cool. That’s it! It’s OATSO simple.
